Cantoin

Cantoin is a small rural commune in the Aveyron department, located on the Aubrac plateau in the Occitanie region of France. This mid-mountain area is characterised by vast upland pastures, open landscapes and farming activity centred on cattle breeding, particularly the fawn-coloured Aubrac breed. The village retains an authentic character, with traditional stone buildings typical of the Rouergue area. The surrounding countryside is ideal for walking, with paths leading through old stone shepherds' huts known as burons and grazing land, as well as for observing local wildlife and flora, especially during the spring daffodil bloom. In winter, the Aubrac plateau is well suited to cross-country skiing and snowshoeing thanks to reliable snow cover. Regional specialities such as aligot and Aubrac beef add to the local experience. The climate is mountainous, with mild summers and cold winters featuring frequent snowfall. Cantoin offers a peaceful base for exploring the Aveyron section of the Aubrac, combining unspoilt nature with pastoral traditions, close to other characterful villages on the plateau such as Laguiole and Saint-Chély-d'Aubrac.
