Ste eulalie de cernon

Sainte-Eulalie-de-Cernon is a village in the southern Aveyron department, set on the Larzac causse within the Grands Causses Regional Nature Park. It belongs to the group of Templar and Hospitaller sites of the Larzac, alongside La Couvertoirade, La Cavalerie and Le Viala-du-Pas-de-Jaux. The village retains a former Templar, later Hospitaller, commandery – a notable fortified complex listed as a historic monument, complete with ramparts, a tower and a Romanesque church. This heritage reflects the presence of military religious orders on the Larzac plateau since the Middle Ages. The surrounding landscape is typical of the causses: limestone plateaus, dry grasslands, stone walls and traditional causse farmhouses, offering good opportunities for walking and nature watching. The area is also known for sheep farming and Roquefort cheese production, with maturing cellars located nearby. The climate features dry summers and harsher winters due to altitude, characteristic of the Grands Causses. The village makes for an interesting stop for those exploring the Templar and Hospitaller heritage and the wider Larzac landscape.
