Laguiole

Laguiole is a village in the Aveyron department, set on the Aubrac plateau at around 1,000 metres above sea level, well known for its traditional cutlery workshops producing the famous Laguiole knives, easily identified by their bee-shaped spring. The village centre features cutlery shops, workshops open to visitors, and a handful of restaurants serving aligot, a local speciality made from fresh tome cheese and potatoes, alongside fourme de Laguiole, a protected-origin cheese made in the surrounding area. A bronze bull statue by sculptor Georges-Lucien Guyot stands at the village entrance and serves as a well-known local landmark. The surrounding countryside, characterised by wide pastures and traditional stone huts known as burons, is suited to walking, with some paths connecting to sections of the Way of St James pilgrimage route. The region experiences harsh winters, allowing for modest snow-based activities, and mild summers ideal for countryside walks. Seasonal transhumance of livestock across the plateau remains a traditional local practice. Laguiole therefore offers a rural destination combining craftsmanship, regional food and preserved upland scenery, away from major tourist routes.
